Why has it proved to be so hard to tell what normals like?

I understand that market research is only so good and making new things is hard but why is the mass market adoption rate so slow? I mean why don't local trials work? Are there some 'hidden network effects' that I don't understand that stop new product adoption? (By normals I mean consumers rather than geeks/thinkers)
